Roasted Tomato Basil Soup

Roasting really brings out the flavor of the tomatoes and onions in this wonderful soup. It has a slightly chunky texture that shows it's fresh and homemade. Fresh basil and garlic steeped in olive oil add a distinct flavor. Pairs well with a 4 cheese grilled cheese sandwich.
